Sheet Cake:
4 Large Eggs
1 Cup Sugar
1 Tsp Vanilla
1/4 Cup Vegetable Oil
1 Tbsp Grated Lemon Peel
2 Tbsp Lemon Juice
3/4 Cup Flour

Filling:
1/3 Cup Butter
1/2 Cup Brown Sugar
28 Oz Canned Fruit, Drained

Beat eggs and sugar together with electric mixer at high speed for approximately 5 minutes. Add vanilla, oil, lemon peel, lemon juice, and flour. Beat until smooth.

Melt brown sugar and butter together in a 7"x11" cake pan, then arrange the canned fruit in the sugar mixture.

Carefully cover the fruit and sugar mix with the cake batter.

Bake in preheated 375 oven for 25 to 35 minutes.
